1. Mixing Requirements in the Food Industry
In food production facilities, mixing equipment is a critical component that determines both process efficiency and product safety. While standard industrial mixers may perform adequately in the chemical or mining sectors, different requirements come to the fore in food applications.
The most important criterion for food mixers is hygiene. Product-contact surfaces must not have dead zones, sharp corners or inaccessible joints that could lead to bacterial growth. Fast and complete cleaning shortens transition times between production lines and eliminates cross-contamination risk.
In addition, food processes generally require low shear. In products such as milk, sauce, mayonnaise or chocolate, excessive shear can disrupt the product structure, break the emulsion or create unwanted air bubbles. Correct impeller selection and speed setting provide homogeneous mixing while preserving product integrity.
Why a Hygienic Mixer?
Food safety regulations (EU 852/2004, FDA 21 CFR, etc.) require production equipment to comply with hygienic design criteria. Standard industrial mixers cannot meet these requirements and create non-conformity risk during inspections.
2. Hygienic Design Standards
EHEDG (European Hygienic Engineering and Design Group)
EHEDG is an independent organization that establishes the Europe-wide accepted guideline principles for the hygienic design of food processing equipment. EHEDG-compliant equipment includes easily cleanable surfaces, a minimum number of joints and geometries that prevent bacterial accumulation. Mixers compliant with this standard are particularly preferred in the dairy, beverage and ready-meal sectors.
3-A Sanitary Standards
3-A standards originate in North America and serve as a reference for equipment hygiene in the food and pharmaceutical sectors. 3-A certified mixers have undergone independent inspection in terms of food-contact surface roughness values, material suitability and cleanability. Mechanimix provides 3-A compliance as standard in its hygienic series.
CIP and SIP Compliance
The CIP (Clean-in-Place) system enables the mixer to be cleaned in place without disassembly. This feature significantly shortens transition times between production lines. SIP (Sterilize-in-Place) provides in-place sterilization with steam and is mandatory in aseptic processes. The Mechanimix BED-N and RC-L series have geometry and seal designs compatible with both CIP and SIP processes.
3. Mechanimix Hygienic Products
Mechanimix offers two main product series that meet the hygiene requirements of the food industry. Both series are developed in accordance with EHEDG and 3-A compliant design principles and are CIP/SIP-compatible.
BED-N Series
Designed for bottom-entry mixing in food tanks. Provides maximum hygiene in food processes with impeller geometry without dead zones, 316L stainless steel body and mechanical seal-less options. Preferred in dairy, yogurt, sauce and beverage production.
RC-L Series
Developed for hygienic mixing in closed reactors and process tanks. With SIP-compatible sealing options, electropolished contact surfaces and ATEX-compliant motor options, it is used in pharmaceutical intermediates, sterile beverages and baby food processes.
HWM-B Series
Suitable for processes requiring high-flow mixing at low speed in large-volume food tanks. Provides homogeneous mixing without disrupting product structure thanks to its wide blade geometry. Ideal for pasteurization tanks and large-scale beverage production.
VD-M Series
Designed for mixing and drying food powders, spice blends and instant products in a vacuum environment. Used safely in food powder production thanks to its fully hygienic interior surface, easily cleanable structure and precise temperature control.
4. Material Selection
Material selection in food mixers is decisive in terms of both hygiene and process compatibility. Wrong material selection can lead to corrosion, product contamination and early equipment failure.
| Material | Application Area | Advantage |
|---|---|---|
| AISI 316L | Standard food processes, dairy, beverage, sauce | High corrosion resistance, food-compatible, economical |
| Hastelloy C-276 | Acidic foods, pickles, fruit juice concentrates | Superior acid resistance, long service life |
| Titanium Grade 2 | Salt solutions, seafood processing | Resistant to chloride corrosion, lightweight |
| Duplex 2205 | High-temperature food processes | High strength + corrosion resistance |
In Mechanimix hygienic mixer series, 316L stainless steel is the standard material. All food-contact surfaces are brought to a Ra ≤0.8 micrometer surface roughness value through electropolishing. This process prevents bacterial accumulation and increases CIP effectiveness.
Hastelloy and titanium options are available for applications requiring special process conditions (high acidity, chlorinated environments, extreme temperatures). Material selection is recommended by our engineering team based on the chemical environment of your process.
5. Application Areas
Mechanimix hygienic mixers have a wide range of applications across different sub-sectors of the food industry. Below is a summary of leading application areas and the recommended product series.
Dairy and Dairy Products
Pasteurization tanks, yogurt production lines, cheese processes and milk powder preparation. The BED-N series preserves product structure by providing homogeneous mixing with low shear in dairy products. 3-A certified design meets the strict hygiene requirements of the dairy sector.
Beverage Industry
Mixing and blending in fruit juice, carbonated beverage, energy drink and alcoholic beverage production. The RC-L series is optimized for the homogeneous mixing of components of different densities. CIP compatibility minimizes cleaning times in beverage lines with frequent product changeovers.
Sauces, Ketchup and Mayonnaise
In emulsion-based products, the right mixing intensity determines product consistency and shelf life. The HWM-B impeller provides sufficient mixing without disrupting the emulsion structure. When used with heating-jacketed tanks, homogeneous temperature distribution is achieved.
Confectionery and Chocolate
In sugar solutions, chocolate mass preparation and sugar coating processes, precise temperature control and homogeneous mixing are required. The VD-M series offers humidity-controlled mixing in a vacuum environment. Wide-blade impeller options are available for high-viscosity chocolate mass operations.
Baby Food and Special Nutrition
In the product group requiring the highest hygiene standards, the SIP-compatible RC-L series is preferred. Mixing in a sterile environment, integration with aseptic filling lines and documented material certificates (EN 10204 3.1) for full traceability are offered as standard.
6. Certifications and Compliance
Mechanimix hygienic mixer series are designed and certified in accordance with all the basic certifications and standards required by the food industry.
